Sparkling Red Wine Re-fermented in the Bottle and then Disgorged

Manual harvesting of the grapes, destemming crushing  and simultaneous maceration  and fermentation for 5-7 days at controlled temperature. Racking, and aging in steel for six (6) months. Wine Draft starting from the Spring following the grape harvest. Manual disgorgement after a minimum of 20 months on its own lees.
